Springtime Supper 5/22/15

It’s been a lush (to put it mildly) spring here at The Swoop House. We were lucky to have avoided all the Memorial Day flooding on the west side of town, and had a lovely (albeit, drizzly) meal of fresh and bright ingredients this last Friday. The smell of white wine and mussels filled our kitchen while our chefs were prepping on Friday. The menu had some especially creative twists including the short rib-phyllo cigar, paired with a creamy “ash” dipping sauce, and a brilliant green, savory asparagus flan.
