Supper Friends 8.14.15: Cajun Cowboy Cookout

IMG_1434 (1)Chef Happy created a Cajun inspired feast for Supper Friends this week. Happy Abdelbaki is one of Supper Friends most frequent chefs. He currently heads up the 2 Dine 4 kitchen and also the kitchen at our sister establishment, the east Austin diner, Sawyer & Co.

Happy originally hails from Louisiana and fell into cooking while being on summer break during medical school many years ago. He has worked as a catering chef, the head chef of The Bourbon Orleans Hotel, a food scientist for The Louisiana Oyster Council and started his own line of dressings. The salad dressings were doing well, until Hurricane Katrina destroyed their production facility and Happy found his way back to Austin.

The highlight of the menu was the crab stuffed flounder with creole hollandaise, It was a wonderful mix of light flounder and crab with the rich umami of hollandaise.
